The popularity of the vegan diet and interest in sustainable eating is growing among Poles. There is a growing public awareness in this regard and a need for knowledge exchange, inspiration and culinary meetings. On April 9 and 10, 2025, with the SMAKKI 2025 Gastronomic Fair, Warsaw became the culinary capital of Poland. One of the highlights of the event was the “Golden Artichoke 2025” culinary competition dedicated to plant-based cuisine.

I had the great pleasure of being a juror in the “Golden Artichoke” competition – it was a true celebration of plant-based cuisine! 12 participants, 12 unique, beautifully served and delicious dishes. The variety of flavors and ideas was amazing, and the choice of winners – really difficult. However, it was the vegan sushi that stole our hearts by winning the competition, which this year was at a very high level. Among the award-winning dishes were vegetable ragu dumplings, vegetarian black pudding, fregola with slivers or crispy vegetable burrito.
